Ingredients
3 lbs. Ground Venison
2-3 Handfuls of Millet Flour (or White Rice Flour)
2 Eggs
2 Garlic Cloves, Minced
4 Tablespoons Chopped Fresh Parsley
2 Teaspoon Salt
1/2 Teaspoon Pepper
Extra Virgin Olive Oil
In a large bowl, combine all the ingredients and dust the meat mixture with the 2-3 handfuls of Millet Flour. Mix everything together until it is well blended. Shape the meat mixture into meatballs, about the size of a ping pong ball. Brown the meatballs in a skillet with extra virgin olive oil on medium heat. Cook until brown and crispy. Remove meatballs from the skillet and set aside to use in a tomato sauce or cover and refrigerate or freeze until they are ready to be used.
