Sweet Potato Spice
I got this idea when my husband and I went to Juices Wild to get some fresh juice. We've been juicing for one week and we needed something a little different without sabotaging what we were doing. The first juice we had was a chocolate cherry cashew butter smoothie. That one was really good, but it didn't have the vegetables we needed. So, we went back again and got something a little better. I tried the sweet potato spice smoothie. Dan, the owner, put some other things in it like hemp protein. So, I thought I would try to recreate it home. This combination turned out really good.
Ingredients
1 Sweet Potato
2 Carrots
2 Green Apples
Dash of Cinnamon
Dash of Nutmeg
Put the fruit and vegetables in the juicer one at a time. Pour in a glass and add the cinnamon and nutmeg. It was so good, my 5 year old son thought it looked like orange juice and wanted to try some. He liked it so much, he wanted me to make him some. It's a great way to get your veggies in.
Gluten Free (Healthy) Rice Crispy Treats
If you want to make them gluten free, you can still use the regular rice crispy treat recipe that uses marshmallows. However, if you want to get away from corn syrup this recipe provides a much better alternative.
These Healthy Rice Crispy Treats were a cinch to make and they hardly took anytime. The only thing I would recommend is putting them in the refrigerator. Gluten Free White Bread
Here is a really good gluten free white bread recipe provided by Bob's Red Mill. I found it on the back of their Potato Starch Flour and have been using it ever since. It makes a great bread for French Toast. It's also a great recipe to use if you can't do brown rice. Here's hoping you enjoy it as much as our family does.
Liquid Ingredients
Gluten Free Blueberry Muffins
2 Cup White Rice Flour
2/3 Cup Honey Granules (White Sugar Substitute)
2 1/2 Teaspoon of Baking Soda
1 1/4 Teaspoon Cream of Tarter
3/4 Teaspoon Xanthan Gum
1/4 Teaspoon Salt
1/2 Teaspoon Nutmeg
1 1/2 Cup Blueberries
1/2 Cup Coconut Milk
1/2 Cup Extra Virgin Olive Oil
2 Eggs
1/2 Teaspoon Pure Vanilla Extract
Directions
Preheat oven to 375 degrees. Spray muffin pan with Olive Oil nonstick cooking spray. Mix flour, honey granules, baking soda, cream of tarter, xanthate gum, salt, and nutmeg in a large mixing bowl. Add blueberries; stir to evenly coat.
Combine milk and oil in a small bowl. Beat in eggs and vanilla, then add to blueberry mixture. Stir until blended. Fill muffin pans 2/3 full. Bake 20-25 minutes until lightly golden brown. Let them cool for 10 minutes before removing them from the pan. Enjoy!
