I never would have imagined zucchini and chocolate would be good together. Surprisingly, they are! I found this recipe in a forum at Celiac.com After my first batch, the kids liked it so much, they were gone in two days! So, if you or your kids don't like vegetables, here is a great way to get them in.
Ingredients
1 Cup Gluten Free Flour
1/2 Teaspoon Xanthan Gum
3/4 Cup Sugar
1/2 Teaspoon Salt
3/4 Teaspoon Baking Soda
1/4 Cup Baking Cocoa
1 Egg
1 Teaspoon Vanilla Extract
1/3 Cup Vegetable Oil
1 Cup Peeled/Shredded Zucchini
1/2 Cup Chocolate Chips
1/4 Cup Chopped Nuts
Directions
In a bowl, whisk together the dry ingredients. Stir in the egg, vanilla, and oil. Stir in the zucchini (it will moisten the batter). Stir in the chips and nuts. Spread batter into a sprayed 8x8 pan. Bake in a preheated oven at 350 degrees. Bake for 30 minutes or until a toothpick comes out clean.
