Here's a list of some information I was looking up for a friend. It can be a challenge trying to cook when you can't have eggs, but this information definitely can make it easier.
General Egg Substitutions
1 Egg=2 Tbs. Potato Starch
1 Egg=1 Small Banana
1 Egg=2 Tbs. Cornstarch + 2 Tbs. Water
1 Egg=1/4 Cup Tofu
1 Egg=1/4 Cup Applesauce
1 Egg=1 Tbs. Ground Flaxseed + 2-3 Tbs. Warm Water
1 Egg=1 Tbs. Soy Flour + 1 Tbs. Water
1 Egg=2 Tbs. Vinegar in 1/2 Cup Water
1 Egg=1/4 Cup Fruit Puree + 1/2 Tsp. Baking Powder
