This is a family favorite. I've done a lot of variations with this cereal and the blueberry coconut mix wins over them all. Since we have a family of 5, I double the recipe and it fills a Tupperware cereal container. You can eat it with milk or by itself. It's that good!
Ingredients
4 Cups Gluten Free Old Fashion Oats
1 Cup Ground Flax Seed
1/2 Cup Sesame Seeds
1 Cup Blueberry Flavored Cranberries
1 Cup Chopped Pecans
1 Cup Shredded Coconut
1 Tsp. Pure Vanilla
1/4 Cup Extra Virgin Olive Oil
3/4 Cup Pure Maple Syrup
Directions
Preheat oven to 250 degrees F. In a large mixing bowl combine the oats, flax seed, seeds, dried fruit, nuts, and vanilla. Add the oil and stir evenly.
Pour in maple syrup and mix well until mixture is evenly moistened. Mixture should be crumbly and sticky. Spread mixture on a lightly oiled cookie tray and bake for 90 minutes, stirring every 15 minutes for even toasting until the mixture is golden brown and dry.
Cool thoroughly and store in airtight container.
Variations
Substitute Cranberries for Blueberries, Agave Nectar for Maple Syrup, or Almonds for Pecans.
