Ingredients
8 Cups Cooked Rice (2 Cups Uncooked)
4 Eggs, Scrambled
1 Leek, Diced
1 Pkg. Large Bean Sprouts
1/4 Cup Carrots, Shredded
3 Tbs. Butter
4 Tbs. Liquid Aminos
Salt
Pepper
Directions
Cook rice following instructions on package (Bring 4 cups water to a boil with 2 tbs. butter. Add rice, reduce heat and simmer in covered saucepan for 20 minutes). Pour rice into an extra large bowl to let it cool.
Scramble eggs in a small pan over medium heat. Separate the scrambled chunks of egg into small pea size bits while cooking. When rice has cooled to near room temperature, add shredded carrots, diced leeks, and bean sprouts into the bowl. Carefully toss all ingredients together.
Melt 3 tablespoons of butter in a wok over medium high heat. When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add liquid amino sauce. Salt and pepper to taste. Cook rice for 10-15 minutes, stirring often,.
