Gluten Free BBQ

Looking for a gluten free barbeque can be pretty difficult.  If you find one, it might not taste so great.  After a long period of time and lots of searching, I found a barbeque that tastes like home, Texas barbeque - Stubb's Bar-B-Q.  This barbeque is made with natural ingredients.  The only place I have found it is at Publix.  Every time I take a bite, it transports me back home having barbeque brisket.  Mmmmm. . . there's no taste like home.

Gluten Free Taco Seasoning

We use this seasoning all the time.  It is great for tacos, burritos (not gluten free), and/or nachos.  I have made some changes to the original to make it gluten free.  I hope you enjoy it!

Ingredients
Original Recipe by Todd Wilbur, The Best of Top Secret Recipes

1 Pound Lean Ground Beef
1/4 Cup Millet Flour
1 Tablespoon Chili Powder
1 Teaspoon Salt
1/2 Teaspoon Dried Minced Onion
1/2 Teaspoon Paprika
1/4 Teaspoon Onion Powder
Dash Garlic Powder

Directions:  In a medium bowl, combine the ground beef with the flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder.  Use your hands to thoroughly mix the ingredients into the ground beef.

Add the seasoned beef mixture to the skillet over medium heat.  Mix well with a wooden spoon or spatula, and break up the meat as it cooks.  Heat for 5 to 6 minutes, or until browned.

Skin Problems

If you have ezcema or any other kind of skin problem, you know how difficult it can be to try to resolve and fix the issue.  My oldest has had a skin infection on the back of her arms for years.  Medicine from the doctor never seemed to work.  The only thing we have found that works is a powdered goats milk and oatmeal body wash.

Ingredients

1 Cup Powdered Goats Milk
1 Cup Old Fashion Oatmeal

Directions:  Put goats milk and oatmeal in a food processor and use the chopping blade.  Store in an air tight container until ready to use.

When ready to use, put a small amount in the palm of your hand and add some water to make a paste. Rub it on the areas that need attention and rinse off.  It makes a great face wash too!

Gluten Free KFC Fried Chicken

Here is a great recipe I've modified to be gluten free.  It is nice and crispy with all natural ingredients.

Ingredients
Original by Todd Wilbur, The Best of Top Secret Recipes

1 Whole Frying Chicken, Cup Up
Vegetable Oil

Brine Solution
4 Cups Cold Water
2 Tablespoons Salt

Coating

2 Cups Rice Flour
1 Tablespoon Fine Salt
1/2 Teaspoon Ground Black Pepper
1/2 Teaspoon Paprika
1/2 Teaspoon Cayenne Pepper
1/2 Teaspoon Ground Sage
1/2 Teaspoon Ground Coriander
1/4 Teaspoon Ground Thyme
1/4 Teaspoon Garlic Powder

Directions:  Trim any excess skin and fat from the chicken pieces.  Preheat oil in a deep fryer to 350 degrees. 

Combing the water and salt for the brine solution in a large bowl.  Stir to dissolve salt.  Add the chicken to the bowl and let it sit for 20 minutes.

Combine the dry coating ingredients in a large bowl.  Mix well.

When the chicken has soaked in the brine solution for 20 minutes, coat each piece with the flour mixture and then arrange each piece on a plate or baking sheet.  When all the pieces have been coated, drop one at a time back into the water again, then into the flour.  This time roll each piece of chicken around with your fingers several times so that the coating builds up.  This build-up of coating will make the chicken crispy.  Arrange the chicken on the plate again until each piece has been coated.  Let the chicken rest for about 5 minutes so that the coating sticks.  Preheat oven to 225 degrees.

Drop the chicken, one piece at a time, into the hot oil.  Fry 3 to 4 pieces of the chicken at a time for 12 to 15 minutes, or until each one is golden brown.  Be sure to turn the chicken halfway through the cooking time so that each piece cooks evenly.

Remove the chicken to a rack to drain for about 5 minutes before eating, then put the chicken into the warm over while the other pieces are frying.

Notes: If you want chicken nuggets or chicken strips, use boneless skinless chicken breasts instead of a whole fryer.

Cuban Salsa

If you need a good way to get your veggies in, this is the best!  Here is a great salsa given to me by Demarius Rodriguez.

Ingredients

5 Tomatoes
5 Lemons or Limes
1 Can of Corn
1 Can of Black Beans
1 Yellow Bell Pepper
1 Green Bell Pepper
1/2 Cup Olive Oil
1 Red Onion
1 Bunch Cilantro


Directions:  Chop tomatoes, bell peppers, onion, and cilantro.  Put it in a large bowl.  Drain can of corn and black beans.  Add to bowl.  Juice lemons or limes and add to bowl with olive oil.  Salt and pepper to taste.  Enjoy!

Apple Cinnamon Millet Cereal

Here is a great recipe for millet cereal.  It tastes a lot like oatmeal.  If you don't soak it as much, it tastes a lot like grits.  Millet is great for the kidneys, stomach, spleen, and pancreas.  It helps relieve Candida in your digestive system too.  It is also considered an alkaline food.  So, if you have acid reflux or too much acid in your system, millet would be a great grain for you to try.

Ingredients

1 Cup Millet (whole)
2 1/2 Cups Water
1 - 2 Tablespoons of Butter
1 Tablespoon Sucanat (Brown Sugar Substitute)
1 Teaspoon Cinnamon
1 Cup Chopped Apples
Maple Agave Nectar

Directions:  Take 1 cup of millet and put it in a bowl, covered in water, and soak overnight.  Once millet has been soaked, drain the water from the bowl.  Fill a pot with 2 1/2 cups of water and 1 to 2 Tablespoons of butter.  Bring water to a boil.  Once water comes to a boil, add the millet.  Cover and cook on medium low heat until all the water is absorbed by the grain.

Once grain has been cooked; add sucanat, cinnamon, and apples and stir.  Put a serving in a bowl and drizzle with maple agave nectar. Enjoy!

Options: Add some chopped walnuts or pecans.

Gluten Free BBQ Chips

If can do potatoes and are looking for a good gluten free BBQ chip, look no further.  Boulder Hickory BBQ Chips are amazing.  My younger daughter and I have to keep ourselves from eating the whole bag in one setting.

Most BBQ flavors tend to be loaded with gluten.  It is difficult finding a good BBQ sauce too.  When you bite into one of these chips, your mouth explodes with flavor.  The best place to get them is Kroger. Sometimes they will be on sale for 1.49.  Once you print off a $1 off coupon, you have just gotten a bag of chips for .49!  You can't beat that price!

Peppermint Oil

The smell of peppermint reminds me of the holidays with all the candy and various spices that fill a room.  A few years ago, my doctor recommended I get a massage as we were trying to figure out everything that was going on with my health.  So, I scheduled an appointment at a very reputable place.  Soft music was playing to calm the nerves and senses.  As the masseuse got ready to begin, he put some peppermint on my temples and on the pillow.  The scent began to fill the room.

Get some peppermint tea or mints if you are wanting to consume it.  It helps everything relax.
